Raised with a love for wholesome cooking, Charlie’s time studying in London and living in Spain refined her food approach. But it was upon returning to Liverpool, an “aha” moment struck. The local vegan scene had become dominated by processed junk food, and finding a restaurant serving fresh, clean, and unprocessed plant-based meals was nearly impossible.

Instead of settling for what was available, Charlie decided to create the kind of place she had been searching for—a restaurant where plant-based food wasn’t about restriction but about celebrating real ingredients in their most vibrant and delicious forms.

Like any entrepreneur, Charlie faced a steep learning curve when transitioning from a personal passion to running a full-scale restaurant. The dream of owning a café sounds idyllic, of course, but the reality of budgeting, inventory management, staffing, and accounting was an unexpected challenge. Initially, these operational aspects felt like a distraction from the creativity of cooking, but over time, Charlie has learnt to embrace them and now finds joy in crafting menus, building a strong, passionate team and ensuring the business thrives.

At Wild Root, every dish starts with a simple question: What’s in season? Vegetables are the foundation of each recipe, with flavours and textures carefully layered to create exciting and satisfying meals. Fermentation plays a key role, with the addition of The Fermentation Station to Wild Root, a fermented products company which Charlie also runs, adding complexity and gut-friendly benefits, while nuts bring richness and creaminess without processing alternatives.

But beyond just the food, Charlie wants every customer to leave Wild Root feeling better than when they arrived. The meals are designed to energise rather than leave you feeling absolutely stuffed, and the space restaurant itself offers a great community. Whether it’s a casual lunch, a special event, or a conversation that sparks between tables, Wild Root has become more than just a restaurant for many —it’s a gathering place for family and friends.

Wild Root’s commitment to sustainability is reflected in its food and partnerships. The restaurant works closely with The Fermentation Station, a local company dedicated to traditional, small-batch fermentation. Their handcrafted ferments are a key part of Wild Root’s menu, adding bold flavours and nutritional benefits. This collaboration also extends to special events, creating unique dining experiences that celebrate the art of fermentation and whole-food cooking. Fruit and vegetables are also all sourced locally where possible, so all the food from the plant to your fork, is as fresh as it can be.

Perhaps one of the most unexpected joys of opening Wild Root has been the overwhelming support from the local community. Having grown up in Halsall, Charlie was moved by the familiar faces who walked through the doors—former classmates, teachers, and neighbours, all eager to support her and her venture.

Since opening, Charlie has witnessed a significant shift in attitudes toward plant-based food. No longer just for vegans, Wild Root attracts a diverse crowd—health-conscious individuals, curious food lovers, and anyone seeking to fuel their body with real, unprocessed ingredients. With growing awareness around the dangers of ultra-processed foods, more people are turning to whole-food, plant-based meals, and Wild Root is leading the charge in making that choice both delicious and accessible.

Looking ahead, Charlie has ambitious plans for Wild Root. Expansion is on the horizon to bring the brand to Liverpool City Centre and beyond.
